Strawberry Banana Pudding

Diane Sanfilippo included a recipe for moo-less chocolate mousse in her paleo guide book Practical Paleo. Before trying this recipe, I had never fully appreciated the amazingly smooth texture of avocado. It inspired me to try other variations, and my favorite is the strawberry-bannana recipe below. I keep several kinds of frozen berries on hand so they’re available all year. 01/01/14 Update: I added 2 tablespoons to the ingredients of this recipe because as I’ve been trying different fruit combinations, I’ve found that adding citrus brightens the flavor of the other fruits in a way that less sweetener is needed.
1 large ripe avocado
1 overripe banana
8 large strawberries (thawed if frozen strawberries)
2 tablespoons lime juice
Liquid stevia extract to taste (optional)
Scoop the avocado flesh into a food processor (I tried mashing them by hand, but the texture is nowhere near as good). Add the banana and process. Add strawberries and continue processing until creamy. Add stevia as needed.
