4 cups blueberries, fresh or frozen
1/2 cup water
Juice of 1 lemon
1 teaspoon xanthan gum
Liquid stevia to taste
Place blueberries and water into a covered saucepan over medium-low heat. If you’re using frozen blueberries, they can be put in the pan while still frozen. Stir frequently.
Once the berries warm up, mash them a bit with a fork to release more juice. Cut the lemon in half, squeeze the lemon juice into the blueberries, and blend well.
Sprinkle the xanthan gum over the surface of the sauce, then quickly stir it in. Once the xanthan gum is well blended, increase the heat to bring the sauce to a boil. Stirring constantly boil until the sauce looks slightly thickened; This should take seconds.
Remove the sauce from heat and allow it to cool for a few minutes. It will thicken a little more as it cools down.
Add stevia to taste and serve.
Low carb: use this sauce in moderation, as fruit contains a lot of natural sugar.
